Thai Style Fried Chicken


1 kg chicken

1pc Ginger

1/2tbsp Thai Belacan

5-10 small onions

5 garlic

1 stalk serai(lemon grass)

1 inch galangale

4 lime leaves

8 chillies

1 stalk curry leaves

1 stalk basil leaves

1/2 tbsp lime juice


Seasoning:

4 sprig coriander roots(remove leaves)

4 garlic

2 tsp peppercorn

1 tsp sugar

1 1/2 tbsp fish sauce

1 tbsp corn flour


METHOD:


  1. Cut chicken into bitesize.Add in seasoning ingredient to marinate for 1 hr.Parboil in warm oil for awhile.*can wash away oil w/water if too oily

  2. Blend Belacan Onion,ginger,garlic, serai, galangale,chilli, coriander stems and fry in oil till fragrant. Add in chicken then slowly pour water mixed with assam juice.

  3. Cover to simmer.

  4. add a tbsp sugar to fry then lime juice if any

  5. Lastly add coriander leaf,lime leaf,basil leaves to fry.

  6. Garnish with curry leave.
