OLIVE RICE
DRIED CHOPPED OLIVE
FRIED INGREDIENTS
INGREDIENTS:
300G COOKED RICE(2CUPS RICE)
100G CHICKEN MEAT(CUT INTO CUBES)
1 WHITE LARGE ONION
4 PCS OLIVE CHOPPED FINELY
3 CLOVES GARLIC CHOPPED
1 STALK SPRING ONION (CUT INTO CUBES)
3 TBSP FISH SAUCE
1 TSP SUGAR
1/2 TSP PEPPER
2 TBSP OIL
METHOD:
Season chicken meat with 1 tsp fish sauce, 2 tsp corn flour, some pepper and 1/2 tsp oil.
Fry the big oinion, chicken meat, black olives, rice and add seasoning-sugar fish sauce and pepper.
Serve with spring onion.
Garnish with cashew nuts/pork floss.

TAKKO(THAI DESSERT)


Cut into 5 equal lines to fold

Ingredients:
90gms bean flour
720ml pandan water
1 cup sugar
1 cup diced water chestnut*choose heavy water chestnut
Method:
  1. Boil pandan leaves w/720ml water
  2. Take 250ml pandan water mix with bean flour*can add agar agar powder if you like crispy texture
  3. Mix sugar bean flour mixture and pandan water together.Stir over low heat till the mixture becomes transparent and then add in the water chestnut. Mix well.Scoop into pandan leaf cups.

Topping Ingredient:

6Tbsp rice flour

1Tbsp sugar

720ml coconut milk

1/2 tsp salt

Method:

Mix sugar, coconut milk and rice flour together and stir over low heat till mixture is cooked.*Must keep stirring

Gently drop on top the first layer while it is hot.*Use plastic spoon to scoop onto top layer as you can get smooth surface

PANDAN CHICKEN
Pound Ingredients:
2 cloves garlic
5 small onions
4 slices lengkuas
4 red chillies
1 sprig coriander root (remove leaves)

Marinated Chicken

Wrapped Pandan Chicken

Other Ingredients:

600g Chicken drumstick/breast meat(boneless chix leg)

2 tbsp curry powder

1 tbsp rice flour

2 tsp brown sugar

1 1/2 tsp salt

1 sprig coriander roots(remove leaves)

About 12 pandan leaves large

Method:

Remove all the skin from the chicken and cut into medium size pieces.

Marinate in pounded ingredients, salt,brown sugar,curry powder,rice flour and chopped coriander roots for about 1/2 hr.

Wrap each piece of chicken in the pandan leaves.Heat oil in a wok until very hot and add wrapped chicken to fry till brown and cooked.

PUMPKIN CREAM SOUP
INGREDIENTS:
400G YAM
700G PUMPKIN
250ML COCONUT MILK
280G SUGAR
1000ML WATER
SOME PANDAN LEAVES
Thickening:3 tbsp rice flour & 1 bowl water
METHOD:
  1. Steam yam and pumpkin slices till cooked.
  2. Put coconut milk,1000ml water,sugar and 4 pcs pandan leaves bundled,add a pinch of salt then cook until boiling.
  3. Put in mashed pumpkin,stir till well mixed.
  4. Slowly scoop a bit of pumpkin mixture to yam and mixed till well mixed then pour the yam mixture back & stir till well mixed.
  5. Add thickening & stir.

*Can add gingko nuts cooked with 2 tbsp sugar for about 5-10 mins

*Can add sago after you put thickening

Thai Style Fried Chicken


1 kg chicken

1pc Ginger

1/2tbsp Thai Belacan

5-10 small onions

5 garlic

1 stalk serai(lemon grass)

1 inch galangale

4 lime leaves

8 chillies

1 stalk curry leaves

1 stalk basil leaves

1/2 tbsp lime juice


Seasoning:

4 sprig coriander roots(remove leaves)

4 garlic

2 tsp peppercorn

1 tsp sugar

1 1/2 tbsp fish sauce

1 tbsp corn flour


METHOD:


  1. Cut chicken into bitesize.Add in seasoning ingredient to marinate for 1 hr.Parboil in warm oil for awhile.*can wash away oil w/water if too oily

  2. Blend Belacan Onion,ginger,garlic, serai, galangale,chilli, coriander stems and fry in oil till fragrant. Add in chicken then slowly pour water mixed with assam juice.

  3. Cover to simmer.

  4. add a tbsp sugar to fry then lime juice if any

  5. Lastly add coriander leaf,lime leaf,basil leaves to fry.

  6. Garnish with curry leave.
