Wednesday, March 28, 2007 PANDAN CHICKEN 2 cloves garlic 5 small onions 4 slices lengkuas 4 red chillies 1 sprig coriander root (remove leaves) Wrapped Pandan Chicken Other Ingredients: 600g Chicken drumstick/breast meat(boneless chix leg) 2 tbsp curry powder 1 tbsp rice flour 2 tsp brown sugar 1 1/2 tsp salt 1 sprig coriander roots(remove leaves) About 12 pandan leaves large Method: Remove all the skin from the chicken and cut into medium size pieces. Marinate in pounded ingredients, salt,brown sugar,curry powder,rice flour and chopped coriander roots for about 1/2 hr. Wrap each piece of chicken in the pandan leaves.Heat oil in a wok until very hot and add wrapped chicken to fry till brown and cooked.
