TAKKO(THAI DESSERT)


Cut into 5 equal lines to fold

Ingredients:
90gms bean flour
720ml pandan water
1 cup sugar
1 cup diced water chestnut*choose heavy water chestnut
Method:
  1. Boil pandan leaves w/720ml water
  2. Take 250ml pandan water mix with bean flour*can add agar agar powder if you like crispy texture
  3. Mix sugar bean flour mixture and pandan water together.Stir over low heat till the mixture becomes transparent and then add in the water chestnut. Mix well.Scoop into pandan leaf cups.

Topping Ingredient:

6Tbsp rice flour

1Tbsp sugar

720ml coconut milk

1/2 tsp salt

Method:

Mix sugar, coconut milk and rice flour together and stir over low heat till mixture is cooked.*Must keep stirring

Gently drop on top the first layer while it is hot.*Use plastic spoon to scoop onto top layer as you can get smooth surface
