Thai Grilled Fish


Pounded Ingredients:
2 Fresh Chillies
1 inch Turmeric ginger
20 dried chillies
1 inch Galangale,sliced
3 stalks lemon grass,sliced
3 sprigs chinese parsley(remove leaves)
10 or more shallots
20 gm Ginger
1 Thai lime rind
1 tsp/more Thai Belacan
3 candle nuts/buah kerahs
*2 tbsp dried prawns,optional

Ingredients:
1 or more fish stingray/black promfret cut into small slice pc
2/more Thai lime leaves(cut into strips)
some banana leaves
Seasoning:
3 tbsp sugar
1 tsp salt
1 tbsp assam add 150 ml water
Method:
Marinate the fish with salt for 1/2 hr.
Fry the pounded ingredients till dark red.Add assam water then cook till dry.Then add sugar & salt fry for a while.
Put lime leave as decor on the fish & chilli to grill/bake
Bake at 150 degree for 20-30mins
